    not really related, but sayin!

    I JUST started eating meat 5 years ago for the first time ever in my life ( was a veggie for 20 years). Had ribs for the first time last year...
    hard to believe but true. Now I want to learn more about cuts, clean a fish...etc. Cooking is addictive.

    I USED TO BE MESMERIZED WHEN YOU AT THE BUTCHER LOOKING AT ALL THE MEATS. IM FROM A FAMILY OF BUTCHERS, STRAIGHT UP. AND FISH, ALL LAID OUT. THAT SHIT IS CRUCIAL.

    I miss those awesome feeds of ribs I had it Memphis, Austin & New Orleans. I've been trying to find/make something comparable ever since I got back, but sadly no dice.

    the key is to cook the ribs for a very long time at a low temperature. the spice/sauce combination should be pretty easy to make well over there...even if all you can find is a cheap BBQ sauce, you can add to that base yourself and give it a pretty nice flavor.

    I really need to get experimenting with sauces, I tried a basic BBQ sauce with plain ribs which was nice but not what I was after. Now I've found these racks with a dry cajun/bbq rub on them that are nice cooked as they are but I need to get some sort of sauce action happening. The experimentation/quest continues.

    I had an ex that would just take a regular cheap Kraft BBQ sauce, add brown sugar, red pepper, hot sauce (Tabasco) and some other stuff to it and make a REALLY good sauce...I can ask her what all she would add to it to make it right...
