I've made butterscotch at my work in the past. In a 35 gallon kettle, you place 45 one-lb sticks of butter, then pour in an entire 50-lb bag of sugar. A small amount of ice cream "mix" is added, you heat and stir with something that looks like a small rowboat oar.
