really though, butter is what you should be using for an omellette and after butter i might use rendered fat before olive oil, but then if you're using fat you might as well use butter
if you're trying not to use butter for health reasons just heat a nonstick skillet up to full temp. and cook your omelette without butter, it should work fine. eggs work well with non stick. or maybe just the slightest spray of "pam" or whatever, if you barely use any the taste isn't really detectable.
Vegetable oil is too heavy for an omelette. Unsalted butter iz the way to go. Pam iz a no-no, but try coppin' a spray can of Canola oil. Olive oil is fine for one omelette, but regulating the temp iz annoying. Ghee is that shit as well.(unclarified butter). Try coppin' from Indian market.

I recommend trying it. I usually HATE all forms of margerine or fake butter but this stuff tastes really good IMO. Traders has it.
