now you're thinking of the goldfish! in the old days (and i guess today in places where folks can), they would return the fish back to the river/pond...now, yea, we keep them til they pass (we once had goldfish that lasted for two No Rooz).
the sabzeh, like the rest of the haft-seen, is kept til the day of seez-dah beh-dar...13 days after.
