As far as choice Fantasy recordings, I will second the love for Creedence.
I will also mention Little Johnny Taylor, soul-blues singer who recorded for the Fantasy subsidiary Galaxy in the sixties.

I played a track off of this for a couple of 20-something music heads....told them it was the new Black Keys and they believed me.
I can totally believe that.
