It's pretty well established that Pawn Stars is all scripted. There was an episode where a guy brought in a Les Paul guitar that he thought was from the 60's and was worth a load of money but found out it was a 70's model worth considerably less. These shows haven't been totally flushed out by cable television yet. The Fortune Seller, Auction Kings, Storage Wars, Detroit Pawn City, American Treasures, Odd Stuff. Pawn Stars has random people holding Subway Sandwiches walking around in the background. Last nights American Pickers had the two guys sitting in a Mexican Restaurant, and the guy next to them just happened to know somebody who collected Western memorabilia.
Some production company is taking photos of various Architectural Salvage companies across the Midwest, in anticipation of making a show about the high stakes tension-filled make or break world of Architectural Salvage. Its more than just doorknobs.

All that said, I still watch these shows because they show some cool stuff with interesting histories, but they are as real as the tooth fairy.
or the episode where chum goes to a bob dylan concert in the hopes of bumping into bob to autograph a record. guess what, by golly gee, who does he happen to run into in front of the stadium?? bob dylan! what a coincidence.
