Had soup this weekend.
Nancy and I shop together on Sat mornings, got to the store and said, what are we eating this week?
Just bought:
Potato
Carrots
celery root (my new favorite)
onion
green pepper
spinach
Italian sausage
Had frozen chicken stock from the last chicken Nancy roasted.
Added potato to stock
cooked onions with olive oil, added green spices in amounts I thought would compliment stock, added garlic, tossed in the rest of the vegies. Added the lot to the stock.
Browned the sausage and added it.
It was fantastic, partly because the stock was so good.
Partly because you all inspired me. Thank All You All!
Soups are about garnishes.
Chop the spinach and put it in the bottom of the bowl. When the soup is done pour over spinach. Sounds weird, but is really good, not slimy.
Top with Parmesan.
The old lady and I were sick on Friday night and I kind of winged this quick spicy chicken soup -- came out really really well
2 quarts chicken stock (low sodium)
4 chicken thighs (w/ bones and skin)
1 large yellow onion (sliced thin)
1 large carrot, chopped
4 cherry tomatoes, quartered
1 thumb-sized piece of ginger (sliced)
3 garlic cloves (skin removed, but whole)
1 large piece of lemongrass (crushed with the side of a knife)
1 jalapeno or other chili pepper, sliced
black pepper
Throw all of the above ingredients into a pot and simmer for about an hour. Take the chicken out, remove skin and bones and put the pieces of meat back into the pot. remove the lemon grass. Add the lime juice. Ladle into bowls and add the cooked noodles, and a handful of green onion, cilantro, and basil.
juice of one lime
Orzo or rice noodles
3 or 4 green onions, chopped
big handful of cilantro, chopped
thai basil leaves, chopped
I didnt follow the recipe here but i did load up on extra fresh Ginger and some other Asian veggies/ingrediants when i picked up the birds in Chinatown.
Banh mi bo kho (Vietnamese beef stew) is one of my favorite soups. I don't have a go-to recipe, but my gal and I have made it once and it turned out pretty good. There are recipes all over the interwebz.
