    Any other way is straight up barbaric in my book.

    I had bad experiences with oysters in Virginia, where they washed them under tab water before putting them back into the shell. Recently, I was in Portland Maine and figured I might give it another shot and again, they tasted like tab water.

    Never got disappointed at the Oyster Bar in Grand Central.
    Personal favorites are Fines Claires and Scottish rock oysters.

    Rinsing them in tap water before serving is truly disgusting, in fact pouring the liquid out before eating is also a big mistake.

    I was in Portland over the winter and had some excellent oysters there (at Street and Company), though I don't remember what kinds. The Smelt were running, so I had some fresh grilled whole Smelt with them, and awesome dinner all around.
