have been sick and feeling unhealthy, think I need some variety in what I'm eating, mostly sandwiches and kabab. - if anyone has some recent good selections of recipes , post them up. but come with the facts in the recipe not with the opinions, although wheat thins are damn good...

  • I decided to start learning to cook recently. And this was one of the first things I tried. Heat olive oil in heavy large pot or Dutch oven over medium-high heat. Add chopped onion and garlic and saut?? 4 minutes. Add parsley and stir 2 minutes. Add tomato, tomato paste and cook 2 minutes longer.b, 21b, 212. Add clam juice, dry white wine, and fish and simmer until fish is cooked through, less than 10 minutes. Add seasoning. Salt to taste.     made clam chowder for the lady and myself tonight. i think it's off an emeril recipeb, 21b, 214lbs clams (i used little neck)b, 213 slices bacon, cut into .5" piecesb, 211 cup chopped onionb, 211/2 cup chopped celeryb, 213 cloves garlic, mincedb, 213 sprigs worth of thyme leavesb, 21a bay leafb, 212 cups peeled, cubed potatoesb, 211 cup heavy creamb, 21pepper, saltb, 211.5 tbsp butterb, 21mince some parsley and green onions for garnishb, 21b, 21bring 2 cups water to boil in large stockpot, put in washed clams, cook covered for 5 minutes, stir with a wooden spoon, cover and cook for about 10 more, until clams are open. remove clams from broth, strain broth to remove sand (i used a coffee filter) you should have about 2.5 cups of broth, if not, add some water to get to 2.5... remove clams from their shells and cut in half.b, 21cook bacon in a largeish pot until crispy, pour off most of the bacon fat, then dump in the celery and onions, cook for five or so, until veggies are soft. add garlic, thyme, bay leaf and simmer another few minutes, add potatoes and broth. boil it for ten minutes, then cover and simmer for 25 min. mash some of the potatoes in there with a wooden spoon, stir. turn off the heat and stir in the cream and clams, salt and pep as fit. leave it half covered for an hour to cool and thicken, reheat slowly (do not boil), garnish and serve.b, 21b, 21should have taken pictures.

    Being a new bachelor who got use to my ex cooking all the time it has taken a while to get in the mode of relearning how to cook for my self...Something simple and healthy I have been doing is buying frozen Salmon filets and a bag of salad and making an easy salmon salad.b, 21b, 21It comes to about $4 a meal and is really healthy and great tasting...not to mention quick and easy.b, 21b, 21That veggie curry sounds really good...I'm printing that out.

    I posted this last week - I had the worst cold in a long while and this soup got me through. Lots of hot pepper sweating and noseblowing and gingery goodness and I was back on track in no time.b, 21b, 21Beforehand have ready:b, 21b, 21washed and chopped greens ??? kale or rapini are my favesb, 21b, 21cubed potatoesb, 21small shell pastab, 21I usually partially cook these and then add them to the soup, I don???t like cooking them in the soup because of all the starch they give off. One way to reduce the starch, too, is to rinse the raw potatoes after you have cut them up.b, 21b, 21In a soup pot, using olive or vegetable oil, cook thickish pieces of ginger (the idea is that they soften but not cook to retain their taste/bite and properties), onion and as much scotchbonnet pepper you think you can handle ??? I usually drop in two or three of them. Make sure you cover the pot and turn on the fan, the cooking peppers will make your eyes water and your throat firey. Cook til onions are translucent. Then add one or two chopped ripe tomatoes, tumeric, cumin and ground pimento. Mix and cover. Mix now and then until tomatoes are mushy. Add greens, cooked potatoes and pasta and mix. Add veg stock (or chicken or beef or what you like). Mix and let it simmer ??? NOT BOIL ??? for about 15 minutes. Boiling will sap the nutrients out. If you don???t mind the bitterness and chewy-ness, you can even throw in the greens at the very end. Some raw ginger, too.b, 21b, 21A splash of lemon juice and you're ready to go.

(make in bulk and freeze if you don't have a lot of time) If you don't fancy that, make sure you buy a good brand variety otherwise they'll be full of 'unhealthy', lots of salt, sugar, preservatives ect. b, 21If you're used to having a bread based lunch (sandwiches/kebabs) you may want to have a roll with your soup, (as that shit's addictive) try and make it a wholemeal/seeded variety, but try and cut it out completely if you can, cause you don't really need it.

    font class="post"1b, 21b, 21It's a great idea to try a have a occasional period where you eat extremely healthily if you're not willing to do it all the time, cause lets face it that's not a lot of fun. b, 21Cutting out all the 'bad' stuff would be enough though. Detox diets that tell you to live off something like salad and juiced vegetables for a week, may make you feel better but its more what you've cut out that doing the good, rather than the actual diet you are consuming. So you could have a more varied, relaxed, slightly more enjoyable diet and get the same results.
