    santa ramen is pretty good. Just get there early if you want the braised pork. That shit always sells out. I think that's the one that sells out.

    I went to a really good noodle house on upper haight recently.1I forget the1name but it's up by that art house movie theater but on the1opposite side of the street.

    Citrus Club. I would say the food is on the bland side. I've never had anything there that won me over. I used to eat there a bunch when I worked at Amoeba. It's not bad, but not one of my favorites. I wouldn't even think of it as a ramen spot though.

You can't just pour broth in a bowl of noodles and make magic. b,121b,121Riding for a place like Citrus Club is like riding for a Vegas buffet. I don't doubt you can have a "good meal" in either place, but it wouldn't be the first place I'd recommend to anyone asking about a specific dish (such as ramen).

I can get "passable" Peking Duck in almost any Chinese restaurant in Cali but I don't have any illusions that shit will be done as well as, say, Koi Palace in Daly City. b,121b,121Ramen especially: the kind of refinement it takes to really execute well on it isn't easy (hence why there's no great ramen in S.F.). The difference between, say, the ramen at Santouka in Los Angeles vs. the ramen at Citrus Club (or one of those many pan-Asian noodle spots) is vast when compared side to side. I was assuming the original poster wanted something really good rather than "good enough."

    Genki Ramen on 3944 Geary Blvd is my favorite ramen place in SF and, in my opinion, compares favorably to Santa Ramen in San Mateo. Lunch portions are very generous. If you're in SF, it beats having to make the drive south.

    font class="post"1b,121b,121In terms of the noodles themselves, what is the specific hallmark of great ramen? I assume that the quality of a noodle resides mostly in its texture, since the ingredients for noodles/pasta cannot really deliver that much flavor.
