What's Good In Bolzano, Salzburg, & Vienna?

To start off my 3rd year of university I'm doing a trip to Bolzano, Salzburg, & Vienna from September 14th to 23rd. I get a credit for it 
of course theres a report attached to it. Theres lots of time for exploring on our own. So of course Id like to know the usual food, record spots, bars whatever to check out. I'm in a geography program so I'd also like to know some anything related that would help my report out, urban, physical geography, environmental, whatever. I really appriciate any suggestions you have, thanks!
