Wash and split the eggplant sideways, cutting in strips. Don't slice it like a zuccini or italian squash. Heat garlic cloves and cooking oil in the pan. Simmer the eggplant until the vegetable is soft. Add additional veggies as desired. Dish the cooked vegetables to the side (should be slightly soft) and heat up a small bit of chopped pork loin. Once this is cooked, mix the two and you have an asian delicacy.
^ should look like that without as much oil, and more chopped if you prefer
This stuff was my nerve medicine last winter. Took a hit when the kiddo had me bezerker with her tyrades. The Wake up call was when I saw that 3/4ths of the bottle was gone in the first month (I'm a believer that liquor should last like 10 years in the cabinet). Haven't touched it since.
I've been abstaining from beer a lot lately, too. I'm psychologically addicted. Get home from a long day at work ... kid finally falls asleep, I need to unwind. Brew was my answer. But 1 turns to 2 turns to 3 and I'm miserable the next day.
