Plenty of obvious ones, such as George Benson's "The Other Side of Abbey Road" (although I think the idea of this is better than the actual execution). The London Jazz Four "Take a Look at the Beatles" has its moments, too.

Amoung the many beautiful jazz covers of Beatles songs, i would recommend the "Norwegian Wood" by The Jack Van Poll Trio + 1. Superb Modal !
