My hillbilly mother from N.C. made them once when I was a kid......we lived at 57th and Ave. K in Brooklyn and the MOT's that lived around us didn't know what to make of the smell.....she made her own "Cracklins" too.

I've tried tripas numerous times and I can say that I'll probably never acquire the taste. I expect a similar experience from Chitterlings, but I'll give 'em a whirl some time when I'm dining with a southern chef of reputation.
