I don't refrigerate mine. I keep them in the cupboard and they keep just fine.
I know there's a contingent that keeps some or all of their butter out of the 'fridge and nice and soft. I wish I could be part of the clique but I never know when the right time is for butter and it's usually cold and hard when I need it most (pause).
