Road Trip - Smoky Mountains

Greetings,
We're going on a short Road Trip from Atlanta through Asheville, across the Smoky Mountains area and out via Franklin to Memphis.
Taking about a week.
Anyone got any nice recommendations plaese?
Specifically, eatin', gazin' (at the countryside) and relaxin'.
We've got a toddler with us so won't be living it up.
Haven't booked any accomodation yet.

Probably going to be playing Townes Van Sandt en route and listening to the radio.
