Would like to say a big thanks to all those people who mailed in showing their appreciation for the last edition of the Happy Jazz show. As always, it's our pleasure to bring you some darn fine music from around the world and highlight those oh so musical treasures and rhythms from countries that are over looked by many shows today. As you will also see, you can download and keep the Happy Jazz show and take us with you, wherever you are and wherever you go! Isn't technology wonderful? The first hour kicks off with 2 outstanding masters of the keyboards, namely, George Duke and Ronnie Mathews. There is some big band business via Dr. Buzzards Originla Savannah Band and the Dave Mathews Big Band, a bit of boogie, some warm Brazilian soul from Evinha and Cesar Costa Filo and new jazz licks from the Ricky Tick and Impossible Ark labels. More new music in the 2nd hour from RYO and Counterpoint records Ashley Thomas. Great afro sounding 7" from The Polyversal Souls and Sean Kuti and Egypt 80 (now, where have we heard that Kuti name before???). More classic Brazilian via Azimuth and Waltel Branco and Italian disco / funk from Eruzoni and Cast before finishing up with some Terumasa Hino. Hungry for more? Well if music be the food of love, play on. But if like us, you like your food, try out the recipe below - Music and food to put a smile on your face!! CRISP ITALIAN CHICKEN AND POLENTA 500g pack ready-to-use polenta 25g parmesan, grated 2 skin-on boneless chicken breast fillets 250g pack cherry tomatoes leaves from a few sprigs rosemary, torn 1 garlic clove, sliced 2 tbsp olive oil Heat oven to 220C/fan 200C/gas 7. Using your fingers, roughly break up the polenta into small chunks and scatter in the bottom of a small roasting tin. Tip in the parmesan and mix. Sit the chicken breasts, cherry tomatoes, rosemary and garlic on top of the polenta, drizzle with olive oil, then season to taste. Roast for 25 mins until the chicken skin is crisp and golden, and the polenta and cheese are turning crusty around the edges. Serve with a green salad.
